white chocolate mudcake with berries

Made a delicious cake for our midsummer potluck in the Stockholm archipelago.

Since the cake stayed out of the fridge for a while it was a bit messy, really unable to cut pieces so instead I had to scoop the cake with a spoon. But still a good cake. So I had to bake one more and eat it refrigerated.

























It has become a new favorite cake. Especially with the white chocolate I added into the cake batter. Mmm...

























I found the recipe at the Swedish food blog Matplatsen, which has become a favorite with all the recipes for food and delicious cakes.

Beat 2 eggs with 2 ½ dl sugar until fluffy. Melt 100 g butter together with 200 g of white chocolate and pour into batter. Add 2 tsp vanilla-flavoured sugar and 2 dl flour into the batter and stir. Pour the batter into a springform, preferably with baking paper covering the bottom. Take 250 g of frozen berries (e.g. raspberries and blueberries) and stir in 2 tbsp potato flour and pour the berries on top of the batter. Bake in 200 C for 25 minutes, it is supposed to be loose and sticky. Keep it in the fridge over night and enjoy the next day!
